Apple Pecan Pancakes Recipe

Fall breakfast fans, rejoice! These sweet, spiced pancakes make for an autumnal-inspired meal worth waking up for.

Ingredients

  • Nordic Ware Autumn Leaves Nonstick 7c Pancake Pan
  • 2 cups My Favorite Southern Pecan Pancake & Waffle Mix
  • 2 eggs
  • 3 tbsp unsalted butter, melted
  • 2/3 cup apple butter
  • 2/3 cup buttermilk
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla
  • 1–2 tbsp milk, as needed

Sauteed Apples

  • 1 red apple, cored and thickly sliced
  • 1 tbsp granulated sugar
  • 1/4 tsp cinnamon
  • 1 tbsp water

Garnish

  • 1/2 cup chopped pecans
  • Whipped cream
  • Maple syrup

Directions

Step 1

To a medium mixing bowl, add eggs, apple butter, cinnamon, nutmeg and vanilla. Whisk until blended.

Step 2

Add pancake mix, buttermilk and melted butter. Whisk until smooth. If batter is too thick, add a bit of milk, one tablespoon at a time until at desired consistency.

Step 3

Using the pancake pan, fill each well with 1–2 tablespoons of batter. Cook for 1–2 minutes or until browned. Use a fork and spatula to flip each pancake over. Cook until the other side is browned and remove from pan. Repeat with remaining batter.

Step 4

Add apple slices, sugar, cinnamon and water to a small saucepan.

Step 5

Cook apples over medium heat, just until they start to soften. Remove from heat.

Step 6

Serve pancakes with sautéed apples, chopped pecans, whipped cream and maple syrup.
