Mushroom & Butternut Squash Gnocchi Recipe

Ingredients
- 1 package porcini and truffle gnocchi, cooked according to package instructions
- 2 tbsp Melchiorri Porcini Mushroom Extra Virgin Olive Oil
- 1 cup mushrooms, sliced
- 1 cup butternut squash, diced
- 4 tbsp butter, unsalted
- 6 sage leaves
- 1/3 cup walnuts, roughly chopped
- 1 tbsp lemon juice
- Salt, to taste
- Pepper, to taste
- Freshly grated parmesan, for serving"
Directions
Step 1
In a shallow pan, add 1 tbsp of olive oil and sauté sliced mushrooms until they brown. Sprinkle salt and transfer to a bowl.
Step 2
In the same pan, heat another tbsp of olive oil and add in butternut squash. Sprinkle salt and cook until butternut squash is softened. Transfer to a bowl and keep aside.
Step 3
In the same pan, melt 4 tbsp butter. Add chopped walnuts and sage. Cook for 30 seconds, until the sage starts to crisp.
Step 4
Add cooked gnocchi and mix well. Cook for another 5 minutes, and then add sautéed mushrooms and butternut squash. Cook for another 2 minutes.
Step 5
Add pepper and lemon juice. Taste and adjust salt. Serve with a generous grating of fresh parmesan.
