Creamy Tomato Tortellini Soup Recipe

A new take on the cold-weather classic tomato soup, this rich, 30-minute meal is full of cheesy tortellini and fit for fall feasting.

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 1 carrot, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp Mutti Organic Tomato Paste
  • 2 tbsp all-purpose flour
  • 5 cups chicken broth
  • 2 cans Mutti Baby Roma Tomatoes
  • 1 package Pagani Cheese & Tomato Tortellini
  • 2/3 cup heavy cream
  • 1/4 cup sliced basil
  • 1/4 cup parmesan, grated
  • Essential Baking French Baguette, toasted

Directions

Step 1

Heat olive oil in a large pot or Dutch oven. Add onions and carrot, and cook until softened, about 4–5 minutes. Add garlic and Italian seasoning, and cook for 1 minute until fragrant.

Step 2

Stir in tomato paste until the vegetables are covered. Sprinkle flour over vegetables and cook for 1 minute, stirring frequently.

Step 3

Pour broth into pot while stirring to break up any clumps. Add canned tomatoes with all juices. Bring to a boil and reduce heat to a simmer. Cook for 5–6 minutes uncovered.

Step 4

Remove pot from heat source. Blend soup using an immersion blender until smooth. Add more broth, if needed. You may use a standing blender to purée the soup and then return it back to the pot.

Step 5

Bring soup back to a boil and add in tortellini. Reduce heat to medium and simmer for 14 minutes.

Step 6

Stir in heavy cream. Stir for 1–2 minutes until well combined. Top with basil and parmesan cheese. Serve with toasted baguette.
