Christmas Rocky Road Fudge Bar Recipe

These no-bake bars are a holiday delight and super easy to make! Serve with your favorite flavored coffee or hot cocoa.

Ingredients

  • 3 cups Guittard Choc-Au-Lait White Baking Chips
  • 6 Walker's Shortbread Fingers
  • 8 Loacker Mini Wafer Cookies
  • 1 cup mini marshmallows
  • 1/2 cup pistachios, deshelled
  • 1/2 cup dried cranberries
  • Optional: Try swapping some of the cookies for 1 cup chopped Panettone bread!

Directions

Step 1

Using double boiler method, slowly melt white chocolate in a large bowl. You can also melt it in a microwave for 1 minute and then 10 seconds at a time until soft, being careful not to burn.

Step 2

Stir until smooth.

Step 3

Let cool for 3-5 minutes.

Step 4

Into a large bowl, add shortbread, wafer cookies, marshmallows, pistachios and dried cranberries and mix.

Step 5

Pour white chocolate on top and carefully stir to combine.

Step 6

Pour mixture into a parchment lined 8” x 8” pan and place in refrigerator for 30 minutes to set.

Step 7

Cut into 12-16 squares and enjoy!
