Marzipan-Stuffed Dates Recipe

Authentic German marzipan and succulent dates come together for an indulgent dessert with a colorful holiday twist.

Ingredients

  • 150 g Schluckwerder Marzipan
  • 15–18 dates
  • red and green food coloring
  • Recipe 33 Cinnamon Vanilla Infused Almonds, for topping
  • Hammond’s Candy Cane Candies, crushed, for topping
  • Guittard Semi-Sweet Chocolate, for dipping

Directions

Step 1

Start by pitting dates: Slice each carefully length-wise, and remove the pit from the center.

Step 2

Divide marzipan into three bowls. Add a little red food coloring to one, green food coloring to the second one and leave the first one as is. Mix using a spatula to get the colors incorporated, making sure to not mix the colors together.

Step 3

Take about 1/2 tablespoon worth of marzipan at a time, and roll into cylindrical pieces that fit inside the dates.

Step 4

Tuck marzipan into dates. Leave it as is, or score the marzipan center using a butter knife to create a diamond pattern.

Step 5

To dip in melted chocolate: Pour chocolate chips in a shallow bowl and microwave for 30-second increments. Stir in between to ensure chocolate doesn't burn.

Step 6

Dip dates into chocolate using a chocolate dipping fork. Place on a parchment paper-lined baking sheet, and top with crushed-up almonds, candy cane candies or drizzles of white chocolate.

Step 7

Chill in the fridge until solid, and then serve.
